Since turning Gluten Free I very rarely have pasta. Personally I like to avoid the overpriced "Free From" section and purely shop around for things that simply don't contain gluten. This recipe has been an adaptation by my sister of a typical pasta bake, so that when I'm home the whole family can eat the same meal. I've been making it myself lately and thought I'd share it with you all!
Gluten Free Chicken and Bacon Pasta Bake - Serves Four
This can be served as a pasta in sauce, or a bake. To make a bake preheat the oven to 180 Degrees.
What you'll need;
- 12 Oz/340 Grams Gluten Free Pasta (Or normal pasta of course if you can eat it)
- Bacon (For all three of these you can choose the amounts, these ingredients can be swapped out to make a vegetarian pasta bake/changed for personal preference. I used 3 slices of bacon, two chicken breasts and half a head of broccoli)
- Half an Onion (chopped finely)
- 1/2 tsp Garlic Salt
- 1/2 tsp Salt
- 1 1/4 Cups Double Cream (which is normally one full tub)
- 1/2 Cup Parmesan Cheese
- 1 1/4 Cup Milk
- 1/4 Gluten Free Plain Flour (I used self raising and had the same result)
- 1/4 Cup Butter
First off simply cook the pasta, broccoli, chicken, bacon and onion. For washing up reduction I used one wok to cook the chicken then used it for the bacon and onion. I begun these then worked on the next step - the sauce.
To make the sauce melt the butter in a saucepan and Gluten Free Chicken and Bacon Pasta Bake - Serves Four
the flour to form a roux. (I had no idea what this was, but as my boyfriends mum is a chef he explained. It essentially forms a dough like texture.) Mix the milk and cream and add slowly while stirring. Stir until thickened. The above photo shows its ending texture.
And then, simply mix it all together.
You can either serve like this, as a creamy pasta sauce, or create a bake. If serving as a sauce, use the parmesan as a topping. To create a bake it's just one more step. Preheat the oven to 180 Degrees at the start for this option. Add the mixture to a large dish (I went for a bigger lower one as I love the crispy topping!), cover with the parmesan and pop in the oven for 10-15 minutes. Take it out and enjoy some creamy, cheesy goodness.
