Healthy(ish) Gluten Free Blueberry and Chocolate Pancakes

Yep, these beauties are gluten free and pretty healthy (minus the chocolate chips of course, which are optional) and even better, just two main ingredients!! I've been making the good old Egg & Banana pancakes for a while and have finally come across the recipe combination that I love. Just in time for pancake day (or as a last minute treat for your loved one on Valentines) here's the recipe!

What you need:
(Makes 4 American Style pancakes)

- 2 Eggs
- 1 Banana (the riper the better/easier!)


- 2 tsp Gluten Free Flour (I used self raising for a bit of thickness, leave this out for healthier pancakes!)
- 1/2 tsp Sugar (I'm a sweet tooth but my boyfriend prefers them without!)
- Chocolate Chips/Blueberries/Strawberries/Bacon, whatever you fancy!!

First off, mash up the banana and eggs together. My banana wasn't overly ripe so I had to use a blender to help, and leave the bubbles to go. If you're adding flour or sugar, also add this now. 

I added chocolate chips into the mixture to melt in, but these tend to group together in the pancakes so I'm still hunting for a better method! Scoop a ladel/spoon of the mixture into a pan with heated oil. Don't spread it out! Wait for the mixture to cook through/brown on the underneath, and flip however you can! (or use a spatula to help!)

Stack them up and decorate however you like. I added more chocolate chips and blueberries. As I'd put some sugar in the mixture, I didn't feel the need for anymore sweetness in the form of honey or syrup, but you can finish these off however you fancy! Then simply go ahead and enjoy!
